White, Dark chocolate and cranberry cookies

So, today I'm here again with another recipe, this time I baked some cookies. I took the recipe from the Hummingbird bakery Cake days book. It's the White chocolate and cranberry cookies recipe, but  I slightly modified it, cause I didn't have enough white chocolate so I added a little bit of dark chocolate.


First of all, you will need:
  • 170 gr unsalted butter
  • 160 gr caster sugar
  • 160 gr soft light brown sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 380 gr plain flour
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • 150 gr dried cranberries
  • 100 gr white chocolate
  • 50 gr dark chocolate

The whole procedure is pretty simple, start by preheating the oven to 170°C, then all you have to do is mix together the softened butter with the two types of sugar, till you obtain a cream. You continue breaking in the eggs , and then adding the vanilla essence, the flour, salt, cinnamon and the bicarbonate of soda.

Lastly you stir in the cranberries and both types of chocolate, which you will have previously broke into small pieces.


Now, you take about a tablespoon of the dough and you roll it, then you place it on the baking sheet that you will have prepared, and I also flattened a little bit each cookie.




You place the tray in the oven for about 15 minutes, and you are done, the only thing left to do is eat them!
